Jeanie's Crostini (by Patrick)


  • Boscoli Italian Olive Salad
  • 1 Baguette Cut into ¼" - ½" thick slices
  • 1 Cup Freshly Grated Parmesan Cheese (any hard cheese will do, but I prefer Parmigiano-Reggiano)


Prepare the bread. You can toast it a bit before you add the toppings. Add a spoonful of olive salad atop each slice of bread. You can spoon it right from the jar! Top with grated cheese. Bake at 350°F for 10-15 minutes, or until just melted to perfection.
These are best enjoyed fresh from the oven, but they also refrigerate well. So easy... it almost doesn't warrant a recipe!
